This is a fantastic opportunity for an experience confectionery manager or head pastry chef to work within a successful, growing artisan bakery with nearly 100 years of heritage.

CORE RESPONSIBILITIES

 

LEADERSHIP

  • Report to the Operations Manager.
  • Develop the team through leadership and coaching.
  • Responsible for managing the day-to-day running of the Confectionery department.
  • Ensure high standards are maintained.
  • Continually review and refresh confectionery products.
  • Cost control.
  • Monitoring & managing performance of all areas of the confectionery department.
  • Responsible for producing all pastry and confectionery products in the correct quantities and of the correct type in accordance with the daily/weekly production sheet.
  • Ensure all cakes, pastries and savouries are made in accordance with the recipes provided in the recipe book.
  • Ensure that the correct processes are followed when producing products.
  • Communicate with the Operations Manager if any problems exist or are anticipated with the production process.

QUALITY CONTROL

  • Ensure the quality of all products is never compromised.
  • Products should be consistent in their overall appearance, colour, size, finish, taste as per the product manual.
  • Ensure Confectionery team are appropriately trained in allergens management and food safety.
  • Maintain a clean, tidy, well-organised department.

HYGIENE

  • Undertake regular hygiene audits.
  • Implement food safety control systems and ensure all tasks are completed and checked on a daily basis.

EXPERIENCE

  • Previous experience in Bakery and Pastry production, particularly in Viennoiserie.
  • Strong planning skills.
  • Team management skills.
  • High level of attention to detail.
